Taste: These edible flowers contain a light yellow to golden brown pollen with a warm, aromatic anise scent.

Uses: Fennel blossoms are ideal for use in a variety of preparations. Add to sauces, dressings and soups or sprinkle atop salads to add flavour and colour. Use the blossoms in oil and vinegar infusions. The anise flavour of these edible flowers will enhance breads, cakes, cookies, risotto and fresh pasta. The mild anise/liquorice flavour combines well with fish, meat and vegetable dishes.

Health Benefits: Edible fennel flowers have high levels in potassium, sodium, vitamin A, C, B-6, iron, calcium and magnesium. They are known to improve bone health, blood pressure, heart health, digestion, cancer and skin.
