Horseradish edible leaves can be used in both raw and cooked culinary applications. Add the whole edible leaf to green and grain salads or roughly chop and add to vegetable dishes or blend and incorporate into salad dressings for a peppery kick. Specialty Produce suggests to use the edible leaf to make lettuce wraps, dolmades, or use instead of seaweed for sushi rolls. Combine Horseradish edible leaves with fresh Basil when making pesto or other sauces and smoothies for added spicy notes. In addition, the edible leaves can be boiled, steamed or sautéed. The leaves have a tough texture, lightly cooking these will make them slightly more tender. The flavour of this herb complements other ingredients such as red meat, shellfish, tomatoes, leafy greens, eggs and basil.

Taste: Horseradish edible leaves flavour is sharp, bitter, and peppery with a taste that's similar to kale and arugula. The smaller the leaf, the milder the flavour and tender the plant.
