Taste: A slightly bitter taste, they are added to salad as garnish. They can be eaten raw or cooked.

Uses: The leaves of mimulus can be eaten raw or cooked. The have a slightly bitter flavour and are mostly added to salads. The leaves can also be used as a lettuce substitute. Edible flowers add colour, flavour and texture to savoury and sweet dishes, as well as cordials, oils and butters. These vibrant flowers deliver a unique addition when decorating dishes. They are both colourful with a delicate fragrant flavour.

Health Benefits: The plant contains vitamins A, C, and K, as well as flavonoids. Internally, a tea can be used to treat diarrhoea and internal bleeding.
