Baby Beetroot Candy can be eaten raw. Specialty Produce mentions that they are extremely popular consumed raw in salads and in cooked applications such as roasting, steaming and boiling. In addition, they can be sliced thinly into wedges and fried into chips for a crisp texture. Please note that the colour will bleed when raw or cooked. The roots have also been known to be juiced and mixed with other baby vegetables and fruit juices for a healthy, superfood smoothie. The leaves of the Baby Beet are also edible and can be sautéed or used in salads, as they are well known for their tender and crisp texture. Baby Beetroot Candy pairs particularly well with cheeses, fruits and bunched herbs such as, mint, dill and fennel.
