Butterfly Sorrel edible leaves have a tangy and sour flavour well suited for fresh culinary preparations. Showcase the edible leaves shape, colour and taste in a variety of sweet and savoury foods. Butterfly sorrel leaves can be added to green and grain salads, layered in fruit bowls or combined with other greens to be used as a bed for seafood. The leaves can be lightly cooked, similarly to spinach. However you must be careful as the delicate leaves will wilt quickly and lose their vibrant colouring. The leaves can also be removed individually and delicately placed on an angle to top cupcakes, cakes and other desserts. Its colour offers contrast and a bright lemony flavour to plates when used as garnish and compliments fish and vegetable dishes. The sharp lemon flavour complements other ingredients such as cherries, raspberries, salad greens and goat cheese. Also pair with seafood such as shellfish.
