The refreshing and surprising oyster flavour of these little flowers is a great way to surprise your guests. These can be used to garnish a range of savoury courses, adding a punch of colour and flavour. For example, these delicate flowers can be placed atop oyster platters. As well as a range of fish dishes and grazing platters. The edible flowers can also be used to garnish wild vegetable dishes. Their vegetal, mushroom hints of flavour make them the perfect savoury edible flower to liven up wild mushroom appetisers.

Taste: Oyster flowers are part of the Borage family and have distinct flavours. Living up to their name, these blue edible flowers possess a flavour very similar to a fresh oyster. There is a slight saltiness to their flavour, with hints of mushroom. Their leaf is icy green and very juicy, whilst the flower adds a pop of blue it also brings a sense of freshness to culinary creations.
