Taste: Red Pac Choi is a Chinese mustard cress. An attractive cress, it has dark red leaves, which are a pleasant green on the underside. The leaves are crunchy and have a more pronounced mustard flavour. Although, this is only lightly peppery, and is complimented by a cabbage-like flavour.

Uses: Red Pac Choi may also be known by the name Red Bok Choy. Best used in raw preparations. Although, also used just at the end of cooking hot dishes. For example, a handful of the micro green can be tossed through a stir fry to add extra texture and nutrition. As a garnish, it can be sprinkled on soups, cream cheese and crackers, or on meat and cheese grazing boards. This cress is often used in Asian cuisine, where it's considered to be an all purpose micro green.
