Easy Autumn Pasta Recipe: Roasted Butternut Squash & Carrot Pasta

The ultimate autumn comfort food

We’ve teamed up with the ever-talented @bakesbymichelle to bring you a pasta recipe that’s pure autumn comfort. Think cosy evenings, golden leaves, and a steaming bowl of silky sauce clinging to perfectly twirled pasta.

This roasted butternut squash & carrot pasta isn’t just another midweek meal – it’s creamy (without cream!), rich, and packed with flavour. Every bite tastes like autumn in a bowl.

Ingredients

  • Butternut Squash (1 halved)
  • Garlic Bulb (1)
  • Red Onion (1)
  • Baby Rainbow Carrots (1 pack (200g))
  • Basil Oil
  • Oregano (3 sprigs)
  • Chilli Flakes (Large pinch)
  • Paprika (Sprinkling)
  • Vegetable Stock (200ml)
  • Spinach (Handful)
  • Fresh Chervil (1 tbsp)
  • Pasta (250g)
The finishing touch...A golden drizzle of basil oil to bring all those autumn flavours together.

Recipe

  1. Preheat oven to 170°C fan. Cut the squash in half and scoop out the seeds.
  2. Add the onion and carrots, then halve the garlic bulb and tuck it into the squash. Drizzle generously with basil oil, sprinkle with chilli flakes and paprika, and add oregano sprigs. Roast for 30 minutes to 1 hour (depending on squash size).
  3. While the veg roasts, heat 2 tbsp olive oil in a small frying pan. Fry the basil for 10–15 seconds, then place on kitchen paper and sprinkle with sea salt.
  4. Cook the pasta according to pack instructions in salted water.
  5. Blitz the roasted veg with the stock until smooth, then pour the sauce into a large pan. Add spinach and chervil, and heat gently until the leaves wilt.
  6. Drain the pasta, reserving a little cooking water. Toss the pasta in the sauce, loosening with the water if needed.
  7. Serve with grated Parmesan and crispy fried basil.
