Both fresh and dried Oregano herb pairs well with cured olives, sheep’s milk cheeses, tomatoes, pork, lamb, potatoes, pasta and with rice dishes. As well as being an ideal aromatic for meat stews and can complement olive oil sauces for grilled and baked fish. Also often complemented with other aromatic fresh bunched herbs, such as thyme, basil, parsley, garlic and olive oil. Best to say this herb is most suited for savoury dishes. Commonly seen in Italian baking, fresh Oregano is used in a range of sauces complementing the other flavours in the dish. Alternatively this herb is used in baked goods like breads and pizza. And in fact Oregano is widely known as ‘the pizza herb’ for its wide spread use on pizza.

Taste: Oregano is said to have a ‘balsamic’ flavour; a combination of mint (a closely related herb), thyme, and rosemary. The taste is strong and somewhat bitter. This fresh version of the herb has a much more aggressive flavour than its dried version.
