Paul Macnish

Over a quarter of a century of kitchen life has led me to where I am today, I’m more in love with food today then I’ve ever been. I’m extremely fortunate to have worked in four countries on three continents, each having it’s own unique way with their cuisine. This has changed my not only how I see the world but how I cook and create food, leaving my creative palate extremely full with the vibrancy of the worlds larder.

My career has been truly eclectic, covering most facets of the hospitality world and allowing me a very unique array of chef skills. I am currently Executive Chef to the ‘Earl and Countess of Derby’ and all of their estates across England, this is very special as I have my own game keepers, shooting lodges, stately homes, a team of gardeners, I get to cook for a very elite guest list and get to step back in time. I have ran several kitchen in both the French and Australian alps, at times being in charge of up to six high level kitchens cooking to a world class standard. I have owned and operated my own award winning restaurant and catering company in Australia, as well as winning awards at many of my venues worldwide.

What I want to bring to the table is playful, well crafted, well balanced cuisine that satisfies more than your hunger, food that makes you think, with a narrative on and off the plate, but essentially… surprisingly good food!

Thoughts on Nurtured in Norfolk

So much to love about what these guys do, you can see the quality well before you even taste it. I have been using Nurtured in Norfolk’s produce for many years now and without a doubt they produce the most consistent and incredible range of natures goodies. I always feel relieved if its there products I see in my veg order as I know it will not only be tasty and fresh but it will last more than the one day other companies produce last.

Recently I have started to deal directly with them and our relationship has become even better, every single member of their team cares about what they do and its shows with every flower or micro herb I receive.

I love their selection wheels as these make private dinners easy and beautiful, but beyond that id be hard pushed to have a favourite as its all so good.

I couldn’t recommend Nurtured in Norfolk enough, they are by far the best in the UK and we are lucky to have them supporting our industry with our cheffy needs.
