Variegated Amaranth edible leaves are also known as Amaranthus Tricolour. Use them raw, sautéed, steamed, or braised in a range of recipes. A common use of this edible leaf is within stir-fries, soups and as a fresh bed in salads. When cooked, Amaranth leaves will release an intense colour, making it an interesting ingredient for your culinary creations. The amaranth Tricolor edible leaves are often cooked with garlic and stir fried with water to make it into a vegetable soup. In addition, this edible leaf is an ideal leafy bed for vibrant meat and seafood entrees and main meals, as well being the perfect accompaniment to sweet desserts and cocktails. Whenever a recipe calls for spinach, Variegated Amaranth leaves are a great substitute, this is due to their likeness in flavour.

Taste: Amaranthus Tricolor edible leaves are extremely rich in vitamins and nutrients. As a vegetable, the taste is very similar to spinach, if not a bit heartier in texture and flavour.
