Borage micro cress adds a surprising burst of texture and flavour to a range of dishes. They can be used individually to garnish smaller plates, but also in larger handfuls to garnish bigger plates to give a refreshing flavour and colour. They should be used as a garnish at the end of cooking to prevent them from wilting and losing their crunchy texture. This microgreen works equally well with sweet and savoury garnishes. For example, Micro Borage pairs well with bunched dill, mint herbs and ricotta cheese, as well as elderflower, strawberries, lemons and oranges. In addition, they can be tossed through salads and stir fries, or mixed into cream cheese, soups and stews. They can also be used to garnish fish dishes and pasta. Koppert Cress recommends pairing this micro herb with fish, including mullet, and avocado. Furthermore, add Micro Borage to traditional cocktails such as a Bloody Mary for a unique spin.
