Chilli edible leaves should be cooked before consumption. In addition, they are best suited for culinary preparations such as stir-frying, boiling and sautéing. Once cooked the edible leaves have a tender consistency, similar to that of water spinach. Use with ingredients such as, garlic, chicken or pork. Furthermore, use as a fresh edible garnish for soups, curries and stews. Chilli leaves are also known as a colouring substance for Thai green curry paste. Specialty Produce notes that the leaves are pureed with water, strained, then added to the paste, giving it an attractive colour without adding the burning heat of the chilli leaves. Best thought of as a natural food colouring. They can be boiled, cooked and are used in various recipes. When boiled, the leaves add a subtle flavour to the dish. A mild leafy flavour mixed with sweet undertones.

Taste: Chilli edible leaves have a mild peppery flavour with warm undertones. They offer a slightly sweet, and grassy taste with a mild bitterness.
