Ice plant edible leaves are best used fresh as a raw garnish, because of its crisp and juicy leaves. In addition, to reduce the salty and sour flavour, cook or blanch. The leaves can be tossed in a green or grain salad or utilised as a unique shaped and flavourful fresh garnish. It can also be lightly sautéed or stir-fried with other edible greens and served with roasted baby vegetables or meats. Furthermore, use as a mild, spinach substitute. For example, whenever a recipe calls for spinach, Green and Variegated Ice Plant is a great substitute due to their likeness in flavour. To enhance the leaves flavour pair with seafood, such as fish, oysters, scallops and crabs. They will also work well with meats such as poultry, beef and pork. Other ingredients that will complement the salty flavour are cucumbers, potatoes, carrots, eggs and lemons.

Taste: Ice Plant edible leaves have a jelly-like interior, which is sour and salty with a grassy undertones.
