Kaffir Lime edible leaves can be used in both cooked and raw culinary applications. They can be used fresh, pressed, boiled, steamed or sautéed. Slice the Lime edible leaves and use in green and grain salads or shred and incorporate into a fish cake mix. Specialty Produce notes that they are also widely used in soups as ‘Tom yum’, as well as hot and sour shrimp, curries, fried rice, stir-fries and pastes. Their herbal and citrus flavour can be used to infuse desserts such as custard and ice cream too. Lime leaves complement other herbs such as basil, cardamom, curry leaves, mint and lemongrass. As well as meats including lamb, chicken, pork and mussels.

Taste: Kaffir Lime leaves grow in pairs and grow in a double leaf formation, which means the leaves mirror one another. The Lime leaves have a rich citrus flavour that is said to be a blend of mandarin orange, lemon and lime. The strong aroma lingers on the nose and taste buds.
