Most commonly, Rocket edible flowers are grown as a salad crop and are perfect for use in raw preparations as a finishing herb. Their peppery flavours and vibrant colours make them a great salad ingredient. Use the edible flowers whole, or delicately pull off the petals to toss through green and grain salads. They will add a zingy bite to any dish, particularly where strong flavours are appreciated. As well as salads, these dainty flowers make a good garnish when floated atop soups. As a smaller edible flower, they also work well with savoury canapés. The look of their leaves has been likened to dragon fly wings, which could make them perfect for a natural looking edible decoration on a variety of cakes, bakes and culinary creations.

Taste: Part of the mustard family, Rocket edible flowers have a peppery flavour. They have a mild spice with nutty undertones. When these edible flowers are cooked, their flavours mellow and their delicate texture is compromised. The rocket flower is considered to be much milder in taste than the edible leaf.
