Micro Rocket Cress is primarily used in savoury courses as this microgreen is best used as a fresh edible garnish. Micro Wintercress can be used as a garnish, flavouring, or salad leaf. When using as a salad leaf, it’s best to use a lighter vinaigrette. This is because anything too heavy will cause the Micro Rocket to wilt too quickly. As a garnish, this Wintercress can be sprinkled on canapés, sandwiches, pizzas and pastas. This micro herb pairs particularly well with ingredients such as cucumber, tomatoes, cheese including mozzarella, feta and chèvre, as well as avocados and olives. To use this micro cress as a flavouring, it can be blitzed and incorporated into pestos or salsa verde.

Taste: The leaves of Rocket micro cress are all different in their own unique way, compared to the mature Rocket herb which has jagged leaves. Instead, the micro herb has smooth, almost heart shaped leaves. These are crisp and succulent. Wintercress does have flavours similar to the mature plant. However, the micro leaves are a little sweeter, yet still possess that peppery and earthy flavour.
