Cardamom edible leaves are most commonly used in a dried state and should be removed from the dish before consumption. They are mainly used for flavouring stews, soups and curries. Furthermore, dried Cardamom leaves can be used as a substitute for Bay Leaves in a variety of recipes. The herb can also be used as a flavouring agent for many baked goods and desserts. In addition, the edible leaves can be boiled and made into a herbal tea. They make an excellent addition to drinks, in a fresh-tasting infusion or mixed with gin. The leaves can also be used in sauces or stocks and work very well with fish. Cardamom edible leaves pair well with ingredients such as black pepper, coconut milk, pork, chicken and lamb.

Taste: Cardamom edible leaves have a fresh taste with a typical flavour of cinnamon and salt. The leaves have a matte finish and become olive in colour when cooked, resembling Bay Leaves and have a subtle spicy taste.
