Chickweed micro cress can be used whole as an edible garnish, or individually as a flavouring. In addition, Micro Chickweed can be used to decorate both hot and cold savoury dishes. In Japan this microgreen is considered one of the seven herbs of spring, important in a variety of their spring dishes. Often used to add textual elements to dishes. Furthermore, this micro herb can be tossed into salads, sprinkled in sandwiches, piled on canapés or sprinkled on pasta. Alternatively, use this micro herb as a flavouring, it can be incorporated into pesto or blended into dressings or a salsa verde. When used in hot dishes, do be careful exposing this microgreen to prolonged heat as it may cause it to wilt.

Taste: Chickweed micro cress is crisp and succulent with tender leaves. These little leaves are small and oblong. Although it's classified as a winter annual, this microgreen has a very fresh flavour. It's slightly sweet, yet has an earthy and grassy flavour with subtle bitter undertones.
