The flowers are most often used raw as a decoration. They can however be blanched briefly if cooking is desired. Due to their mild yet bitter flavours, Chop Suey flowers are best used as savoury garnishes. Try decorating salads, fish dishes and soups with them. The flowers can be used whole for decoration, but can also have the petals removed. Removing the petals will allow your garnish to go a little further! The light summery colours of the Chrysanthemum flower makes them great for garnishing summer cocktails or mocktails if you’d rather. Why not drop a few whole blossoms on top of jugs of your favourite summer punch to boost the aesthetic.
