These edible flowers have a citrus and sweet liquorice taste and are best used fresh as a garnish. The individual clusters can be removed from the stem and gently shook over a variety of dishes to catch the fallen pollen and petals. The fresh flowers are extremely popular for their bright colouring and used as a garnish atop desserts and appetisers. The flowers can be used as a baking decoration, by sprinkling the pollen over a cake to create a yellow colouring in a natural way. In addition, infuse into oils or steep into tea to introduce a warm and rich taste. Fennel flowers pair well with seafood, rich meats and citrus flavoured fruits.

Taste: Fennel flowers have a crisp texture with an anise-like aroma. The flowers also offer a sweet flavour with liquorice undertones, similar to the fennel seed. Although, the taste is considered mild in the fennel flower making it great for decorative touches as it won't alter the taste of your bakes.
