Fennel micro cress can be used as a garnish for both sweet and savoury dishes. This microgreen compliments sweet ingredients including apples and oranges. When using as a savoury garnish, the anise flavour of this micro herb compliments seafood, parsley, potatoes, thyme and beets. To add as a flavouring, Micro Fennel cress can be used in dips and sauces as well as salads. In terms of cuisine, Fennel pairs particularly well with Indian and Italian cuisine. This microgreen is best suited to raw preparations as when exposed to pro-longed heat it tends to wilt. It’s also best stored cold so be sure to add it at the end of your dish preparations to preserve quality of the product.

Taste: Fennel micro cress is very thin and grass-like. At the tip of the edible leaves, there are often a few small, edible brown seeds still connected. The Fennel itself is succulent and tender, more so than the mature fronds. The micro cress has a very robust and lemony, anise aroma. Its leaves possess sweet and grassy notes, with a peppery anise finish.
