Kinome edible leaves are best used for raw culinary preparations, because of their fresh, delicate nature and flavour. Specialty Produce notes that the edible leaves are popularly showcased when garnished on tartars, soups, grilled fish, salads, rice and stir fries. It has also been known for the edible leaves to be mixed with miso for a peppery paste, that is similar to pesto. In addition, toss this homemade paste with meat and vegetables. Pair Kinome edible leaves with a variety of teriyaki foods and meats such as fried chicken, tuna, clams and squid. Furthermore, the flavours work well with other ingredients such as bamboo shoots, lemon, aioli and ramen.

Taste: Kinome edible leaves are small in size with a bright green colour and a waxy, shiny appearance. These edible leaves are fragrant with a light and citrus aroma. The texture is crisp and tender with minty and peppery taste, that leaves notes of lime and a mild lingering heat.
