Lemon Verbena edible leaves are an incredibly versatile herb, it’s appropriate for both sweet and savoury dishes. The leaves can be eaten raw and used in pestos, vinaigrettes and salads to add a touch of lemon freshness. They can also be lightly cooked and used for culinary preparations such as infusing oils and syrups. Use Lemon Verbena to flavour jellies, jams, fruit glazes, crème brûlée, ice cream, sodas and teas. Compliment the robust lemon taste with ingredients such as anise hyssop, basil, lemon grass, lavender, mint and thyme. As well as ginger, apricots, berries, melon, nectarine, peaches, cream and honey. For maximum shelf life, the leaves are best kept in the fridge and within a sealed container.

Taste: When crushed Verbena leaves release a robust lemony fragrance with hints of ginger and spice. The herb is slightly sour on the palate, but has a sweet and fruity flavour that is more potent than other lemon-scented herbs.
