Okahijiki edible leaves are also known as Saltwort and Land Seaweed. The ‘Oka’ translates to Land and ‘Hijiki’ means Seaweed, which is a gourmet specialty in Japanese cuisine. Land Seaweed is often used in sushi, green or grain salads or as a fresh garnish for chicken and fish dishes. The edible leaves can be lightly cooked in salty water and butter to maintain a crisp texture and enhance flavour. Use the larger leaves as a bed for meat dishes or take the smaller leaves to garnish appetisers and canapés. Okahijiki edible leaves pair well with ingredients such as soy sauce, sesame seed oil, vinegar, garlic and raw fish.

Taste: Okahijiki has a long, thin and grass like appearance with succulent and rounded leaves. They are harvested when they are between 10 and 15 cm long, this is when they are at their most tender. Land Seaweed is juicy with a crisp texture, and has a tart, salty taste.
