Olive Oil edible leaves can be made into preserves to be used for a variety of eating and cooking purposes. In Chinese cuisine, preserved Olive Oil leaves are used in a variety of ways. Most commonly they are eaten with a classic Chinese breakfast called ‘Congee’. Alternatively, they will use the leaves as a fresh garnish in a range of dishes such as stir fries. Olive tree leaves can be prepared as a hot herbal tea. When the olive leaves are added to hot boiling water, the taste is similar to that of a green tea, but much sweeter. A leafy green or grain salad composed of these little plants is a wonderful first course at a tasting dinner. They also offer an easy way to enhance simple dishes like a potato salad.

Taste: Olive Oil edible leaves are oblong, measuring 4-10 cm. When consumed the Olive tree leaves have a unique bitter taste with a satisfying mellow flavour.
