Oyster Leaf Sea Veg, also known as Sea Bluebells or Mertensia Maritima, are mostly found growing wild on the coast of Scotland. These salty edible leaves are a great garnish to complement an oyster platter or a wild mushroom dish. Like any other Sea Vegetables, Sea Bluebells make a great accompaniment to seafood dishes. Furthermore, they may even add the salty taste to recipes without the need for actual seafood. Therefore, this Sea Vegetable is the perfect alternative for a plant-based seafood dish. Suttons notes that this plant is often called ‘The Vegetarians Oyster’. In addition, Flower Dale Farm suggests that Oyster Leaves can be used as a salt substitute for red meat dishes or to contrast and complement coffee and chocolate flavours.

Taste: Oyster Leaf Sea Veg has fleshy leaves that are extremely rich in flavour. The taste is very similar to oysters, anchovies, mushrooms and borage, with a touch of freshness. Available mostly all year round, Sea Vegetables are best kept in the fridge for maximum shelf life.
