Sea Purslane Sea Veg is at its saltiest when eaten raw. Great British Chefs notes that in fact, it’s so salty, raw Sea Purslane shouldn’t be served in any great quantity, just simply as a garnish. Blanching or steaming this Sea Vegetable will reduce the intense salty flavour it imparts when raw. Sea Purslane makes the perfect natural partner for fish dishes, thanks to its sea salt flavour. As its main characteristics are greenness and saltiness, it also works well alongside red meats, such as lamb and veal. Pairing Sea Vegetables with green bunched herbs is a good way of highlighting its juicy, vegetal flavours. Furthermore, when it comes to seasoning this Sea Vegetable, it’s best not to overwhelm it with too many different flavours. Great British Chefs advises a simple pinch of black pepper, a squeeze of lemon or knob of butter showcases its beauty perfectly.
