Sea Fennel is best eaten lightly cooked and correctly blanched, to maintain its salty flavour and crunchy texture. Rock Samphire is considered to be suited for many seafood dishes, such as fish, shellfish and sushi. The succulent leaves and stalks of Sea Fennel can be boiled, steamed and eaten in a similar way to asparagus. In addition, the highly aromatic and salty leaves can be used fresh in salads. The young leaves, stems and seeds can also be used in pickle making, to preserve the Sea Vegetable. Sea Fennel pairs well with meats such as fish, capers and pork. Accompany with quail eggs, broad beans, olives and lemon juice to compliment the saltiness. With a dusty green and grey appearance, try using this unique Sea Vegetable to garnish traditional cocktails and mocktails.

Sea Fennel Sea Veg is highly aromatic when lightly crushed, says Specialty Produce. It has a crunchy, salty and vegetal taste with flavours reminiscent of parsley, carrots and asparagus.
