Uses: Sea Fennel Sea Veg is best eaten lightly cooked and correctly blanched to keep it's salty flavour and crunchy texture. Rock Samphire is considered particularly suited for many seafood dishes, such as fish, shellfish and sushi. The succulent leaves and stalks of Sea Fennel can be boiled, steamed and eaten in a similar way to asparagus. In addition, the highly aromatic and salty leaves can also be used fresh in salads. Furthermore, the young leaves, stems, and seeds can be used in pickle making to preserve the Sea Vegetable. Sea Fennel pairs well with meats such as fish, capers and pork.
