In Latin, Tarragon Herb is known as Artemisia Dracunculus. Also in France this Herb is often referred to as "King of the Herbs".  

Taste: Tarragon's strong flavour overpowers other herbs, so it is best used sparingly. It's a tender leafy, aromatic herb. Both leaves and stem are edible and give off an anise aroma and taste. Said to have touches of vanilla, mint, pepper, and eucalyptus. There are few substitutions for tarragon given it's unique taste.

Uses: It pairs well with egg dishes, poultry, and sauces like béarnaise. Tarragon can also be used to flavour vinegars and soft drinks. Seeping the herb in hot liquid draws out the anise flavour. Often used in the French Béarnaise sauce. This herb is incorporated into salad dressings and sauces as well as chicken and potato salads. It can be snipped and tossed into a green salad or used as a garnish. The soft leaf is, as a general rule, best added at the last minute, so as to remain fresh or just wilt under latent heat, tarragon stems can handle higher temperatures, so you could add to casseroles or when steaming, without wasting the herb.
