Wild Garlic edible leaves are best showcased raw due to their delicate nature. In addition they can be lightly cooked and incorporated into stews, soups, muffins or pasta. They are often used as a garnish or simply added into mixed green salads. Fold the edible leaves into bread or pasta dough to add a slight onion quality without being overly pungent. Alternatively, use the Wild Garlic leaves in savoury pancakes and raw herbal sauces such as pesto or salsa. Specialty Produce suggests to thinly slice the leaves and add to mashed potatoes, blended into pesto, sprinkled over pizza or chopped and mixed into sour cream, mayonnaise or cream cheese. The garlic flavour compliments ingredients such as, fish, lamb, beef, eggs, cream, ginger, lime, parsley, thyme and mushrooms.

Taste: Wild Garlic has long slender green leaves, like thick blades of grass. The leaves are highly fragrant with a pungent garlic and onion-like aroma. When crushed the scent from the leaves are heightened. When used in cooking applications, the flavour is much more subtle and less potent.
