Taste: Salicornia are crisp and crunchy with an intensely salty flavour, which can be muted with cooking.

Uses: Salicornia are best when either served raw or lightly blanched. Salicornia will intensify the aroma and taste of seafood. Substitute Salicornia for green or yellow wax beans – just be mindful of their already salty flavour. Pair Salicornia with sharp cheeses and cured meats, ham or salami.

Health Benefits: Salicornia are high in protein. The sea vegetable is also a good source of vitamin A, calcium and iron.
