Shiso edible leaves are most often used in Northeast Asian cooking and is commonly paired with fish. The leaf cannot withstand high heats, so it’s best used as a fresh garnish. Shiso leaves add a crisp texture to a range of savoury dishes. If using in Asian cuisine, this red and green herb is great for garnishing on top of soups, noodle dishes, stir fries, vegetables sides, and seafood. Although it is most commonly used in Asian cuisine, Shiso complements various other flavours and dishes too. The subtle flavour of the Perilla leaves can dress seafood platters, pasta, risotto and roasted meats. Furthermore, it pairs well with lemongrass, ginger, garlic and chilli. As well as poultry, pork, apples, plums, mushrooms and sesame.

Taste: Shiso edible leaves are also known as Perilla or Chinese Basil and are soft, crisp, succulent and tender. The leaves come in either a delicate purple or green colour. The edible leaves are earthy and spicy with herbal and sweet flavours. The flavours and aromas of the leaf are reminiscent of basil and mint with a mildly spicy aftertaste.
