Sweet Potato edible leaves can be used in both raw and cooked culinary preparations. They can be tossed in raw green and grain salads, superfood smoothies, or in replace of any leafy green in a recipe, such as spinach. In addition, try blanching the leaves in hot water and use the reserved cooking water for a later use broth. Furthermore, sauté with garlic or stir-fry with coconut milk and serve over rice or pasta. The leaves should always be thoroughly washed and chopped well into smaller pieces before eating. Sweet Potato leaves compliment savoury flavour enhancers such as fish sauce or dried shrimp. As well as aromatics including garlic, onion and ginger. The spinach flavour of the leaf pairs well with meats such as chicken, beef, pork or fish, broccoli, mushrooms and peppers.

Taste: Sweet Potato leaves have a slight bitterness when used as a fresh edible garnish. When cooked the deep red leaves have a mild, slightly sweet flavour, with a taste similar to spinach or water spinach.
