Taste: Pandan edible leaves have a distinct grassy aroma when crushed or bruised that eventually mellows out to a herbal and floral aroma. Once cooked the leaves have a nutty, almond and rose-like flavour with sweet undertones.

Uses: Thai Pandan edible leaves are great for cooked applications including boiling, steaming, sautéing and frying. The leaves are used in sweet and savoury dishes to bring out their nutty flavour. In addition to savoury preparations, Pandan leaves are also used make desserts and cocktails. Specialty Produce notes that they can be made into a paste with the juice extracted to make the well-known chiffon cake, and can be cooked to make Kaya.
