Thai Water Morning Glory, also known as Water Spinach, River Spinach, Swamp Cabbage or Chinese Spinach. Kangkong bunched herbs can be eaten raw or in cooked preparations including steaming, boiling or stir frying. The young shoots of Thai Kangkong can be used in green or grain salads, along with green papaya and soy sauce. However, they are commonly stir-fried in oil and served as a side dish or combined with other vegetables and meats to make a full meal. Alternatively, they can be used in curries, soups or coated in batter and fried to make a crisp canapé or appetiser. Water Morning Glory pairs well with other aromatics such as ginger, garlic, bay leaves and onions. Compliment the sweet and nutty flavours of Kangkong with meats such as cuttlefish, chicken, pork and beef.
