Taste: This herb distinct sour note and sharp lemony tang due to their oxalic acid content. Also said to be reminiscent of a strawberry or kiwi, for it's refreshing qualities. While the lemony taste of the leaves does become milder once cooked, it can still pack a punch.

Uses: This herb may be used raw as salad green or a fresh herb, or sautéed similarly to spinach. This Bunched Herb makes for a Tasty addition to salads or a sharp side dish to red meat, roasts or stews. Sorrel makes an excellent puree, for sauces or soup. Complimentary flavours include, hard aged cheeses, cream, eggs, fish, caviar, oysters, lentils, potatoes, spinach, onion, shallot, mustard, parsley, tarragon, mint, chervil and nutmeg. In Indian cuisine it's used in soups and curries. When cooked this herb breaks down making it useful in sauces like Pesto. Make your own herb dressing using basil, sorrel and olive oil blended together making a perfect salad dressing.
