Thai Pennywort, also known as Bai Bua Bok, are commonly used to make juice. You’ll taste a slight grassiness that can be quite bitter when not balanced with sugar or sweetener. The leaves can also be eaten raw, dried, sautéed or pickled. This herb has a much stronger flavour when paired with flavours including ginger, lemongrass, chillies, fish sauce, coconut, coriander and limes. Cook this Thai herb as you would any green, depending on the cuisine and the culture, they can be used in a variety of ways. Fine Cooking notes that in Sri Lankan and Vietnamese cuisine, Pennywort is eaten as a leafy green. But it also stewed into teas and blended into refreshing, sweet drinks.

Taste: Specialty Produce says that Thai Pennywort bunched herbs has a fresh herbal quality with notes of wheat grass, parsley and cucumber. The aroma possesses an earthy smell that is similar to the scent of carrots.
