Thai Cookbook TV notes that the leaves are used in preparation of an Asian dish called ‘Kaeng No Mai Som’ or sometimes called ‘Keng Lao’. Which translates to a sour tasting soup that also includes bamboo shoots, chillies, salt, citrus, sometimes including oyster mushrooms, straw mushrooms, cha-om, or other ingredients. They say that the leaves are generally not used whole, but rather a juice extract is made from Thai Yanang Leaves. This is then used to make a broth, primarily as a thickening agent, rather than for its flavour. This is done by extracting the water from the leaf, using both hands to rub on the leaves. Rub back and forth until they are completely out of water. This method is called Nam Yanang, meaning ‘Yanang Water’.

Taste: Thai Yanang edible leaves are widely used in the cuisines of North East Thailand. They are also known as, Bai Yanang or Bai Ya Nang. Thai Yanang edible leaves are neither sweet or sour. They have a subtle, mellow and pleasant flavour.
