30g dried cranberries
3 dried figs
50g salted pistachios (in the shell)
50g sweet grilled peppers, drained
30g Parmesan
3 sprigs rosemary
4 sprigs thyme
1 orange
100ml Rosemary oil
2 tsp honey
1 tbsp balsamic vinegar
Pinch of chilli flakes
Focaccia or sourdough, to serve
Finely chop cranberries, figs, pistachios, grilled peppers, herbs and grate the Parmesan.
Add everything to a shallow bowl with the herb oil, orange zest, sea salt and chilli flakes. Stir gently to combine.
Finish with balsamic vinegar and honey. Serve with warm focaccia or sourdough for dipping.

Baby Beetroot Salad with Caramelised Pear, Feta & Pistachios
A fresh, festive salad with sweet caramelised fruit and salty feta
This Christmas salad balances earthy beetroot with warm caramelised pear, creamy feta and crunchy pistachios. It looks beautiful on the table and feels special without being complicated.
You'll need:
Cooked baby beetroot, halved
1–2 pears, thinly sliced
Butter + brown sugar (to caramelise)
Handful of rocket (arugula)
Pistachios, chopped
Olive oil + lemon juice
Salt & pepper
Method:
Cook pear slices in a pan with a little butter and brown sugar until golden.
Toss beetroot with rocket.
Lay the caramelised pear over the rocket
Crumble feta over the top.
Sprinkle with chopped pistachios.
Drizzle with olive oil and lemon juice.
Season lightly and add edible flowers.
Season with salt and pepper.

Rich dark chocolate with warm festive spice and a floral finish
These simple truffles blend smooth dark chocolate, cinnamon and nutmeg for a cosy Christmas treat. Finished with delicate edible flowers from Nurtured in Norfolk, they make a beautiful homemade gift or festive dessert.

You'll need:
200g dark chocolate (70%)
100ml double cream
25g butter
1 tsp cinnamon
Pinch of nutmeg
1 tsp vanilla extract
Pinch of sea salt
Cocoa powder mixed with icing sugar or melted dark chocolate for dipping
Edible flowers to garnish
Method:
Heat the cream gently until just simmering.
Pour the hot cream over the chopped chocolate and leave to stand for 1 minute.
Stir until smooth, then mix in the butter, cinnamon, nutmeg, vanilla and salt.
Chill the mixture for around 2 hours, until firm enough to shape.
Roll into small truffles.
Coat in the cocoa powder mix or dip into melted dark chocolate.
Finish each truffle with a single edible flower.
